Fresh, dark chocolate covered strawberries

Ingredients

  • 1 lb. strawberries
  • 1 ½ cups of melting chocolate wafers or the entire 225 grams melting chocolate bar
  • 1/3 cup shredded sweetened coconut (Optional ingredient)
  • 1/3 cup shredded coco nibs (Optional ingredient)

Instructions

Strawberries and chocolate to use in this recipe

Make sure you use only fresh, fully ripe but still firm strawberries. Frozen strawberries, or strawberries that are soft to the touch won’t work because they cannot take the heat of the melted chocolate.

Do not soak strawberries in water as they will become waterlogged. Do not remove the stems and green leaves. They will come in handy when you dunk your strawberries into melted chocolate.

Use chocolate melting wafers or melting chocolate bars only. In theory, any chocolate will melt if you apply heat to it. Unfortunately, we had variable results with melting regular chocolate bars. For that reason, we recommend that you use only melting chocolate in this recipe.

How to melt chocolate over a bain-marie or water bath.

Bain-marie is not as scary or difficult as it may sound! To get your bain-marie going, fill a pot with about 1 ½ inches of hot water. Bring it to a gentle simmer. Add chocolate to a heat-proof bowl, large enough not to sink into a pot. Put the bowl with chocolate over the pot. Take great care that the bowl doesn’t have any contact with the boiling water. Start stirring it with a spatula, until all the chocolate in the bowl becomes a homogeneous silky smooth glistening mass.


Method

  1. Thoroughly wash strawberries under the running cold water. Dry them on a tray, lined with a paper towel, for 20 minutes or so.
  2. While the strawberries dry, prepare the tray or plate to rest your finished product. Cover it with parchment or aluminum paper. If using, have your cocoa nibs or shredded coconut ready.
  3. When your strawberries are almost dry, in 15 minutes or so, start a water bath.
  4. Melt the chocolate over the water bath. Take it off the heat.
  5. One by one, holding the strawberries by the green leaves gently dip them into chocolate.
  6. Dip chocolate covered strawberries onto shredded coconut or cocoa nibs if using any of these.
  7. Lay dipped strawberries on the parchment-lined tray.
  8. Put the tray with dipped strawberries into a fridge. Let it sit for 20 minutes.

Recipe Tips

  • Take great care to dry your strawberries well. It is important not to introduce any water into the melted chocolate as it will seize. Do not put the strawberries in the fridge to dry. Let them sit on your kitchen table or counter as you continue to work on your recipe.
  • It is important that you don’t overheat the chocolate. Do not raise the heat too high as your chocolate will separate. Do not melt the chocolate over direct heat as it will burn it.
  • Measure coconut shavings and cocoa nibs into containers suitable for dipping or rolling strawberries.
  • You can use short wooden skewers to hold your strawberries. Do not use more than one strawberry per skewer. Do not skewer the strawberry through. Make sure that each strawberry sits snugly on the skewer and doesn’t slide down.
