Ingredients

  • 1 baguette
  • 4 oz. goat cheese log
  • 1/3 cup soft ricotta cheese
  • 1 mandarin
  • ¼ cup walnuts, broken into large pieces
  • 1 ½ tbsp. apricot jam
  • 1 ½ tbsp. peach preserve
  • ½ tsp. balsamic glaze
  • 1 tbsp honey
  • ¼ tsp chipotle powder
  • 2 small soft chorizo sausages
  • 1 tsp Spanish sweet smoked paprika
  • 3 tbsp. olive oil
  • 2 figs
  • ½ tbps. balsamic glaze

Method

Make Crostini

  1. Preheat oven to 400 F
  2. Slice the baguette into 1-inch-thick slices.
  3. Brush baguette slices with olive oil on both sides
  4. Grill in the oven for 3-5 minutes or until desired crispiness is achieved.

Assemble Tapas

Ricotta, mandarin segments & spiced honey

  1. Mix honey with chipotle powder in a small fireproof dish. Warm the honey-chipotle mixture over medium-low heat till it becomes almost liquid but does not bubble.
  2. Spread ricotta cheese on crostini slices
  3. Add two mandarin segments on top  
  4. Drizzle with spiced honey

Pair with Sweet Madeira

Semi-cured soft Spanish chorizo, olive oil & sweet and smoky Spanish paprika

  1. Remove chorizo from its casing 
  2. Combine chorizo, olive oil, and paprika and blend in a food processor till a homogeneous spreadable mass is formed.
  3. Spread over the crostini slice

Pair with Dry Madeira wine

Ricotta, peach preserve & balsamic glaze drizzle tapas

  1. Spread ricotta cheese on crostini slices
  2. Spread a thin layer of preach preserve on top. 
  3. Drizzle with balsamic glaze.

Pair with Sweet Madeira wine

Goat Cheese, Red Fig & Balsamic Vinegar

  1. Spread goat cheese on crostini slices.
  2. Slice figs. Arrange fig slices on top of the goat cheese.
  3. Drizzle with balsamic glaze.

Pair with either Dry or Sweet Madeira wine

Goat cheese, apricot jam & Walnut pieces

  1. Spread goat cheese on crostini slices.
  2. Spread a thin layer of apricot jam on top. 
  3. Add walnut pieces as desired, 2 – 3 pieces per crostini

Pair with Sweet Madeira wine

Tapas Board Tips

  • Do not worry if you don’t have a balsamic glaze, you can make your own! This is how:
    • Heat balsamic vinegar with a bit of sugar or honey. The proportion of vinegar to sugar is 4:1.
    • Bring it to a boil.
    • Lower the heat to simmer till it gets reduced to the desired consistency.
  • Make sure to use a semi-cured soft-to-touch chorizo. We used Spanish chorizo fresco ourselves.
  • If you do not have peach preserve, you can substitute it with peach compote.
