Ingredients

  • 2 smoked trout fillets, broken in chunks and flaked
  • 1 celery stalk, finely chopped
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ small red onion, finely diced
  • 2 green onions, finely chopped
  • 5 small radishes, thinly sliced. Reserve one for decoration.
  • 1 sprig of Italian parsley, finely chopped
  • 1 tbsp. of chives, finely chopped
  • 1 tsp freshly squeezed lemon juice
  • ¼ tsp black pepper or to taste
  • Salt to taste

Method

  1. Mix all ingredients. Season with black pepper and salt to taste.
  2. Decorate with reserved radish slices and sprinkle with chopped chives.
  • Serve it with crusty baguette or grilled sourdough slices.

Recipe Tips

  • This recipe is best if eaten on the same day. It will keep in the fridge for a maximum of one day. Sour cream, celery and lemon juice will make this salad go watery if kept for longer than that.
