What is puff pastry?
Home cooks and professional chef like puff pastry for its light, flaky, and buttery texture. It is a popular choice for a wide range of sweet and savory puff pastry recipes. The unique characteristics of puff pastry stem from the laminating process, where layers of butter are folded into the dough multiple times. Its distinctive layers puff up during baking, resulting in a crisp and airy consistency of the finished dish.
Crafting puff pastry at home can be a time-consuming process, leading many home cooks to opt for the convenience of store-bought alternatives.
Tips for Working with Puff Pastry
- Keep puff pastry dough and ingredients cold to ensure proper layering and puffing during baking.
- Thaw frozen puff pastry in the refrigerator according to package instructions.
- Remember, never to refreeze thawed puff pastry. If you refreeze the pastry, the moisture content may change, leading to potential issues with texture, sogginess, or loss of flakiness when the pastry is eventually baked.
How to blanch apples
Blanching apples involves briefly immersing them in boiling water and then quickly transferring them to ice water. This process is commonly used to soften the skin, or to partially cook the apples for certain recipes. Here’s a simple guide on how to blanch apples for this puff pastry recipe:
- Bring a pot of water to a rolling boil. While the water is boiling, fill a bowl with ice water.
- Using slotted spoon carefully lower sliced apples into the boiling water. Allow the apples to blanch for about 2 to 3 minutes.
- Quickly remove the apples from the boiling water using the slotted spoon or tongs. Immediately immerse them in the ice water bath to stop the cooking process.
