- 3 oz. Halloumi cheese 100 grams
- 1 cup heirloom cherry tomatoes
- ¼ tsp. balsamic glaze
- 2 tbsp. olive oil
- 1 sprig rosemary finely chopped
- pinch of salt
Sprinkle cherry tomatoes with salt and a tbsp. of olive oil. Grill in the oven on high until tomatoes blister and gently collapse, about 5 minutes. Once done, sprinkle with chopped rosemary.
Heat a grill pan on high. Cut the cheese into 1/2-inch slices and brush each slice with olive oil. Grill for about 2 minutes on each side or until they get grill marks.
Assemble the dish. Plate the Halloumi cheese and top each slice with a few roasted cherry tomatoes, along with their juices and rosemary. Finish by drizzling a touch of balsamic glaze for the perfect balance of flavors.
Serve warm
