Caramelized Onions

Ingredients

  • 7 lb. yellow onion
  • ½ cup sunflower oil or any other neutral oil
  • pinch of salt

Instructions

  • Peel the onions and thoroughly wash them. Cut them in half and slice into thin slices.
  • Place the sliced onions in a large pan and coat them with olive oil. Stir to ensure the onions are evenly coated.
  • Cover the pan with a lid and bring the oil to a bubble over medium high heat.
  • Let the onions soften over the next 10 minutes. When they become translucent, reduce the heat to a low simmer and uncover the onions.
  • Stir occasionally, roughly every 30 minutes. The onions will transform into a rich, raisin-like hue, and will look like a homogenous brown and jammy looking mixture, a sign that you've achieved the desired caramelization.
  • For optimal results, consider using a diffuser under the pan. The goal is to gradually caramelize the onions, allowing them to work their magic for at least 3 to 4 hours

Notes

Caramelized onions can be stored in the fridge for up to one week.
