- Sprinkle cherry tomatoes with salt and olive oil (1 tbsp.) Grill in the oven on high until tomatoes blister and gently collapse, about 5 minutes. Once done, sprinkle with chopped rosemary.
- Heat a grill pan on high. Cut the cheese into 1/2-inch slices and brush each slice with olive oil. Grill for about 2 minutes on each side or until they get grill marks.
- Assemble the dish. Plate the Halloumi cheese and top each slice with a few roasted cherry tomatoes, along with their juices and rosemary. Finish by drizzling a touch of balsamic glaze for the perfect balance of flavors.
