We used a handful of sweet heirloom cherry tomatoes, nature’s candy, straight from our urban mini-garden. If you don’t have these available at hand, you can use any type of tomatoes, just dice them before putting in the oven.

Instructions – Step-by-Step:

  1. Sprinkle cherry tomatoes with salt and olive oil (1 tbsp.) Grill in the oven on high until tomatoes blister and gently collapse, about 5 minutes. Once done, sprinkle with chopped rosemary.
  2. Heat a grill pan on high. Cut the cheese into 1/2-inch slices and brush each slice with olive oil. Grill for about 2 minutes on each side or until they get grill marks.
  3. Assemble the dish. Plate the Halloumi cheese and top each slice with a few roasted cherry tomatoes, along with their juices and rosemary. Finish by drizzling a touch of balsamic glaze for the perfect balance of flavors.
  4. Serve warm
