Easy to prepare: Just soften the butter, add a variety of complementary ingredients, roll it into a log shape and chill. You've got yourself a kitchen helper to make an ordinary dish into a gourmet masterpiece. Our sundried tomatoes compound butter will infuse Mediterranean flavors into any dish you apply it to.

Ingredients

  • 1 cup butter
  • 1/3 cup sundried tomatoes canned
  • 1 tbsp garlic powder
  • 1 tsp. red chili flakes
  • salt to taste may not need any if using salted butter

Instructions

  • Allow the butter to sit at room temperature until softened and pliable.
  • Place the sundried tomatoes in a food processor and pulse until finely chopped. Then, add remaining ingredients to the food processor and pulse until the mixture is smooth and all components are well combined.
  • Spread a piece of plastic wrap over a flat work surface. Scrape the butter mixture onto the plastic wrap. Using a scraper, shape the mixture into a single line. Roll the plastic wrap tightly around the butter mixture to form a log.
  • Place the log in the refrigerator to set for at least 30 minutes.

Notes

  • Compound butter can be stored in the fridge for up to 2 weeks in an airtight container and can also be frozen for longer storage. Thaw frozen compound butter in the refrigerator before use to maintain its texture and flavors.

Caramelized Onions

Caramelized onions: your culinary charm. Elevate any dish, from tapas to burgers, with their exquisite touch. Transform meals in 4 hours flat. Or go savvy with a batch – caramelized onion preserves, your kitchen's secret weapon.

Ingredients

  • 7 lb. yellow onion
  • ½ cup sunflower oil or any other neutral oil
  • pinch of salt

Instructions

  • Peel the onions and thoroughly wash them. Cut them in half and slice into thin slices.
  • Place the sliced onions in a large pan and coat them with olive oil. Stir to ensure the onions are evenly coated.
  • Cover the pan with a lid and bring the oil to a bubble over medium high heat.
  • Let the onions soften over the next 10 minutes. When they become translucent, reduce the heat to a low simmer and uncover the onions.
  • Stir occasionally, roughly every 30 minutes. The onions will transform into a rich, raisin-like hue, and will look like a homogenous brown and jammy looking mixture, a sign that you’ve achieved the desired caramelization.
  • For optimal results, consider using a diffuser under the pan. The goal is to gradually caramelize the onions, allowing them to work their magic for at least 3 to 4 hours

Notes

Caramelized onions can be stored in the fridge for up to one week.
Alternatively, you can preserve them by using this canning recipe for longer shelf life.

Juicy Kobe Beef Burger Patty Recipe

Burger Patties

The patty made from Kobe beef makes a flavorful and juicy burger.

Ingredients

  • 1 lb. Kobe beef ground
  • ¼ small yellow onion
  • 1 tbsp. Worcestershire sauce
  • 2 tbsp. Ketchup any brand
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  • Mince onion in a food processor. Place in a mixing bowl with other ingredients and season generously
  • Divide the meat into four equal portions and shape them into patties using a mold. We used square molds but round molds will work fine too.
  • Arrange the patties on a tray lined with parchment paper. To prevent oxidation, lightly brush the patties with olive oil. Next, cover the tray with plastic wrap and place it in the refrigerator for approximately 3 hours. This resting period will allow the flavors to harmonize and the burgers to firm up,

Prepare the Main dish:

  1. Begin by preheating your oven to 400°F (200°C).
  2. Fry pancetta until it turns crisp and then set it aside.
  3. Using a cast iron skillet or griddle, sear each patty on both sides until dark brown and crisp. If a cast iron skillet isn’t available, a regular skillet works well for this step.
  4. If you’re using a cast iron skillet, place it with the patties into the preheated oven. For those using a regular skillet, transfer the patties to a baking tray lined with parchment paper and then place the tray into the oven. Continue cooking the patties until they reach your preferred level of doneness.
  5. Approximately three minutes before removing patties from the oven, place a slice of Raclette cheese on top of each patty and return them to the oven to allow the cheese to melt slightly. Keep in mind that the recommended total cooking time for medium doneness is around 12 minutes, although actual cooking times may vary based on your oven.
  6. While the burgers are cooking in the oven, prepare the buns. Slice them in half, brush each cut side lightly with olive oil, and then gently toast them on a griddle or skillet.
  7. To assemble your burger, start by spreading the caramelized onions on both halves of the Ciabatta bun. Next, layer on a round of crispy pancetta, followed by a desired amount of fresh arugula. If you’re using it, add a thin slice of the optional sundried tomatoes compound butter. Place the hot burger patty on top, and then add a slice of tomato. Finally, complete your burger by topping it with the second half of the Ciabatta bun.
